Oxidation stability is a quality indicator of biodiesel. During the manufacturing process, vegetable oils and fats are esterified in the presence of methanol. The fatty acids in the oil produce methyl esters and glycerol as a by-product. Fatty acid methyl esters, like all natural vegetable oils or fats, are relatively unstable during storage and will be slowly oxidized by oxygen in the air. Therefore, oxidation stability is a very important quality indicator of biodiesel; it is a routine testing item in the production process. The redox process can be delayed by adding antioxidants, so the instrument can also be used to measure the effectiveness of antioxidants.
